Brixham crab toasties

Serves 3-4 as a starter

 

100g white Brixham crab meat (if you have the time and patience, you can buy whole Lundy crabs, cook them and then pick and shread the crab meat)

100g cream cheese (at room temperature)

2 tbsp mayonnaise

15g dried white breadcrumbs

1 tsp soy sauce

pinch of cayenne pepper

sea salt and black pepper

1 small ciabatta or baguette, thinly sliced on the diagonal

 

Preheat the oven to 170ºc/ Gas 3.

Pick over the crabmeat and remove any tiny pieces of shell.

Soften the cream cheese in a bowl, then mix in the mayonnaise and crabmeat.

Add the breadcrumbs and soy sauce, and season with cayenne and salt and pepper to taste.

Spread the crab mix evenly on the bread slices and place on a baking sheet.

Bake in the oven for 10 minutes.

Serve with a lightly dressed mesclun (mixed green leaves) and herb salad.
